The application of trehalose in the frozen desserts industry


The trehalose can used in jams or preserves factory, the jams or preserves products has many kinds, trehalose can replace 20 – 25 % of sugar


Trehalose has several functions in the jams or preserves product, it is followed in below side:


1.Enhances and evens out fruit flavor profile
2.Maintains natural color of ingredients

There are need to noticed in the processe of making frozen desserts cookies, trehalose need to adjust sugar content to obtain desired sweetness



1.cups graham cracker crumbs (about 16 squares)

2.cup butter (melted), or canola or soybean oil

3.tablespoon sugar

4.quart (4 cups) vanilla no-sugar-added, reduced-fat ice cream, slightly softened

5.can (8 oz) crushed pineapple in juice, undrained

6.teaspoons rum extract or 1/4 cup rum

7.teaspoons coconut extract, if desired

8.cup flaked coconut, toasted



1.Heat oven to 350°F. In small bowl, mix cracker crumbs, butter and sugar. Press into ungreased 8-inch square (2-quart) glass baking dish. Bake about 10 minutes or until dry. Cool completely, about 1 hour.

2.In large bowl, beat ice cream, pineapple with juice and extracts with electric mixer on low speed just until blended. Spread in baked crust. Freeze about 6 hours or until firm.

3.Remove dessert from freezer about 5 minutes before serving. Sprinkle coconut over top.

Depending on the dish, simply add as an ingredient or dissolve in water to use. Simply add 0.5% to 5% by weight. Although trehalose is technically a sugar, when used along with other ingredients the sweet taste becomes negligible.

For sushi rice: add 1 tablespoon (10 grams) of Treha Trehalose to 450 grams of uncooked rice.
